Quick Chicken Tortilla Soup
1 - 2 lb precooked roasted chicken
2 - 14 oz cans chicken broth
1 - 15 oz can chopped tomatoes w/green chiles
1 - 11 oz can whole kernal corn w/sweet peppers, drained
1 - small jalapeno, seeded and finely chopped
1 - tsp ground cumin
2 - tbsp cilantro
1 - tbsp lime juice
Tortilla chips, broken
Remove skin from chicken and then remove meat from bones. Take off enough chicken to make 2 cups. In a large saucepan, mix broth, undrained tomatoes, corn, jalapeno and cumin. Bring to boil and reduce heat. Simmer, covered, for 10 minutes. Stir in chicken, cinlatro and lime juice. Heat through and top w/chips. Serves 6.
